I recently had the pleasure of cooking for some Cape Henlopen High School students and their family members. The dinner was an award ceremony for the completion of their wellness course. I gave a quick healthy cooking demonstration and then dinner was served. I served food that was healthy and tasty! Everybody really had a great time. Congrats triple ten challenge students. They all were winners!

Good, Clean, and Fair Food at TS Smith and Sons Orchard


Last sunday was a great success! We felt like we had a back stage pass to one of the most beautiful places on Delmarva! The sun was  shinning and it was a perfect fall day for the orchard. Charlie and Greer were excellent host everybody enjoyed picking the prized Stayman and Black Twig apples.

Katie Freer of Sprouting Chefs is Slow Food Delmarva’s new Youth Director and was doing all sorts of fun activities such as painting pumpkins, apple stamps (my favorite), face painting, and a lot more!I carved the Slow Food Snail from an apple.

I was inspired by the day and when I arived at Nage for dinner service I composed a dish including the Black Twig apple.

I made an apple/cider stock and poached halibut in sous-vide, and garnished the dish with fennel, pollen, cocoa bread crisp, opal basil, absinthe, and olive oil.

Autumn FUN!

I love the fall, especially when I have the beach all to myself. I love the changing leaves, crisp nights, and all of the GREAT produce! So many seasonal favorites to enjoy like warm apple cider and the pumpkin pie. OH, the pumpkin pie! I’m back from my blogging hiatus. Summer was great and business exceeded my expectations. The warm months flew by.

Last weekend The Celebrity Chefs Beach Brunch to benefit Meals On Wheels Of Delaware was held and was very successful. Thank you to all the Chef’s and all of the great people who made it happen. That event will provide very many meals to home bound seniors through out the state of Delaware.

This Sunday Slow Food Delmarva and TS Smith and Sons are joining together to hold an apple picking event from 1-3 at their orchard in Bridgeville, Delaware. Bring a picnic basket because there will be lots of family fun including Sprouting Chef’s very own Katie Freer teaching the kids. There also will be face painting, hay rides, and great deals on all of the apples that you pick. Come enjoy a fall day and join us in our fight for Good, Clean, and Fair food for all!
